Our beef Nigiris are some of the most popular hors d’oeuvres in the market and a staple on most high-end dinners and were popularized at The Wagyu Bar in Miami, FL. People will make lines for a nigiri. They are a bite-size rectangular mound of rice topped with beef, sesame seeds and our special sauce.
Carpaccio is a dish of meat or fish, thinly sliced or pounded thin,
and served raw, usually as an appetizer. It was invented in 1950
by Giuseppe Cipriani from Harry’s Bar in Venice and popularized
during the second half of the twentieth century. You either love
beef carpaccio or you have not tried it. But it is not the easiest
thing to make. Moreover, most restaurants use extremely cheap
beef to make carpaccio.
This is a carpaccio where you need to garnish very little and let
the beef shine. It is that delicious and literally melts in your
mouth. The A5 Miyazaki-Gyu and Olive Wagyu Carpaccios are
probably the most premium carpaccio in the world.
The NY Strip Steak contains fat in levels that are somewhat in between the tenderloin (virtually none) and the ribeye (plenty of good, melty fat), and has flavors and textures that are more uniform throughout, unlike the ribeye which has varying textures. These steaks have been positioned in the market as a luxury items as a result of their world-class genetics. Our Australian Wagyu has won multiple awards including the Gold Medal for Branded Beef at the 2019 Queensland Food and Wine Show.
Miyazakigyu Wagyu is the #1 Wagyu brand in Japan and supply stateside is quite limited. This steak is usually sold for $35-$50 per oz at top steakhouses. We now cut our Striploins into whole steaks. As that was preferred by our customers. The Striploin is the equivalent of the New York Strip in A5 beef. That said, the Japanese cut their primals slightly differently. We recommend the Striploin to share as it is one of the most consistent steaks. Share it between a few people and everyone will have a similar experience.

This Cabernet Sauvignon will surprise you. Pairs well with every meal, this is
the wine you always want to have in your home.
It is not an easy wine to find! The 2020 Grayson Cabernet Sauvignon shows a
dark ruby color with a rich nose of blackberry, raspberries and hints of black
pepper. This intense Cabernet is full of artful fruit, provides a round mouth feel
and a soft lingering finish with hints of toasted French oak.
Brewed and then aged for over a year at very low temperatures before
being blended and bottled.
Midorikawa is a 135-year-old, family-owned boutique brewery in the snowy,
mountainous south-eastern part of Niigata Prefecture. The area is famous
for producing the most expensive and delicious sushi rice called koshihikari.
Midorikawa is a topflight producer of clean, pristine, connoisseur sake and
have won gold medals at Japan National Sake Competition in 2015, 2008,
etc. This sake is exceptional in that the sake is stored at low temperatures
for more than a year for maturation. After a year in snow storage the brew
master blends to create a complex, consistent, seasoned and unique final
product. All of the flavors and aromas are in harmony with each other.
