Creamy Whipped Feta & Crispy Chickpea Penne Chips

Creamy Whipped Feta

Ingredients
  • 1 cup crumbled feta cheese
  • ¼ cup Greek plain yogurt 
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dried dill
  • ¼ tsp dried oregano
  • Sea salt to taste
  • Bacon crumbles to garnish
Instructions
1. Blend: Place everything in a small blender or food processor. Pulse until smooth and spreadable, with some flecks of feta remaining. 
2. You’re done! Serve with crispy pasta chips, fresh veggies, classic chips, or spread onto sandwiches, wraps, salads, bowls, or burgers for a delicious upgrade.

Crispy Chickpea Penne Chips

Ingredients
  • 8 oz chickpea penne or bowtie pasta (or your favorite kind of pasta)
  • Olive oil spray
  • 2 tbl freshly grated Parmesan cheese
  • 1/4 teaspoon Italian seasoning
  • Salt to taste
Instructions
1. Cook pasta according to package directions and let cool.
2. Preheat the air fryer to 390 degrees.
In a large bowl, spray the pasta lightly with olive oil.
3. Sprinkle with Parmesan cheese, Italian seasoning, and salt.
4. Cook the pasta in the air fryer for 8-10 minutes, stirring frequently for even browning.

Charred Asparagus & Dates With Goat Cheese

You’ll have this textural masterpiece on the table in just 15 minutes (or less): snappy asparagus, creamy goat cheese, crunchy radishes, and—the true showstopper—chewy, charred dates. Thanks to their natural sugars, dates caramelize beautifully in a hot skillet, turning crisp and smoky on the outside while staying irresistibly gooey inside. They’re our new favorite way to add a sweet, savory punch to any plate of veggies, and they pair especially well with the bright, crisp flavors of spring.
Ingredients:
2 watermelon radishes or 3 red radishes, trimmed, thinly sliced
Zest and juice of 1 lemon
¼ tsp. kosher salt, plus more for finishing
2 Tbsp. extra-virgin olive oil, divided, plus more for drizzling
1 bunch asparagus (about 1 lb.), trimmed
1 tsp. freshly ground black pepper
¼ tsp. crushed red pepper flakes
8 Medjool dates, pitted, halved lengthwise
3 oz. fresh goat cheese
2 Tbsp. coarsely chopped mint
Directions:
Step 1
Toss radishes, lemon zest and juice, and ¼ tsp. kosher salt in a small bowl; set aside.
Step 2
Heat 1 tsp. oil in a large skillet over medium-high. Cook asparagus in a single layer, undisturbed, for 2 minutes. Shake the pan and cook 3–4 more minutes until charred and crisp-tender. Transfer to a platter and sprinkle with black pepper and red pepper flakes  and flaky salt. 
Step 3
Wipe out skillet. Heat remaining 1 tsp. oil over medium. Cook dates, stirring occasionally, until charred in spots and beginning to stick to pan, about 3 minutes.
Step 4
Scatter dates over asparagus, then crumble goat cheese over. Top with mint and reserved radishes, then drizzle with oil and any liquid from radish bowl.
