Well, June is officially ushering in Summer! It's the season when school bells fall silent, calendars loosen, and daylight stretches deliciously into the evening. With the sky still blushing well past dinnertime, we’re free to linger on patios, chase sunsets with one last sip, and let mealtimes carry on at an unhurried pace.

The markets are piled high with sweet corn you can almost taste raw, berries and cherry baskets glowing like rubies, and tomatoes so sun-warm they perfume the air. These summer stars practically beg us to step out of the kitchen and follow our appetites from one alfresco table to the next.

With a name that pays homage to the beloved TV show The Waltons,” Good Night John Boy” will transport guests back to the funky and groovy era of the 1970s.

We get it—watermelon in a salad can sound like culinary confusion at first bite. For those used to enjoying it sliced, chilled, and solo at summer picnics, tossing it in with feta, mint, or even onions might feel... bold. But here’s the trick: watermelon’s juicy sweetness acts like a natural dressing, balancing salty, tangy, and herbaceous flavors in a way that wakes up your palate. Think of it not as fruit invading your salad—but as the refreshing anchor that brings everything else to life. And really, there’s no better time to give it a try than now—summer is peak watermelon season, when the fruit is at its ripest, juiciest best.

Savory Watermelon Salad Stack

Marinated Watermelon
  • 8-10 rectangles of watermelon about 3x4 inches & 1/2 inch thick
  • juice of one lemon
  • 4 mint leaves chopped
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp honey
Salad Ingredients
  • 2 marinated watermelon slices
  • 4 tsp crumbled feta
  • 2 mint leaves chopped + more for garnish
  • 1/2 slice cooked bacon chopped
  • A ew small slices of very thinly shaved red onions
  • balsamic vinegar
Instructions
  1. In a ziploc bag, combine watermelon slices and ingredients for marinade. Allow to marinate overnight in the fridge.
  2. To make the salad, place a slice of watermelon on the plate, top with 2 teaspoons of crumbled feta, then 1 chopped mint leaf.
  3. Place another watermelon slice on top.
  4. Top with another 2 teaspoons of crumbled feta, another chopped mint leaf, 1/2 a slice of chopped bacon, a few red onion shavings, and finish with a drizzle of balsamic vinegar and a mint leaf for garnish!

YOU MUST TRY THIS HEALTHY DRINK RECIPE

Nothing cools off a steamy South Florida day quite like a fizzy shrub over ice. This old-school refresher, made from fruit, sugar, and vinegar, has made a comeback for good reason: it’s bright, tangy, endlessly customizable, and oh-so-refreshing. While there are a few ways to make one, we love the cold-process method, where ripe summer fruit (like berries, peaches, or even tropical blends) is macerated with sugar until it releases a syrupy, fragrant juice. Once strained, that fruit syrup is mixed with vinegar, and here’s where things get really exciting.
In Palm Beach Gardens, local makers are crafting small-batch tropical fruit vinegars—think passionfruit, mango, guava, and pineapple—that take your shrub from homemade to next-level. For added complexity, infuse your shrub with fresh aromatics like a few slices of ginger, sprigs of rosemary or thyme, bruised mint leaves, or a strip of lemongrass. Serve it over club soda for a zero-proof cooler—or give it a splash of gin, tequila, or rum if you're feeling festive. While it’s delicious on day one, a little time in the fridge (a few days to a week) helps the flavors mellow into something truly sippable.

TROPICAL FRUIT VINEGAR SHRUB RECIPE

Ratio — Rule of 1
  • 1 part Tropical Fruit Vinegar (any flavor!)
  • 1 part Fresh Fruit mashed (your choice - berries, citrus, stone fruit, etc.)
  • 1 part Sweetener (sugar, honey, agave, maple syrup, etc.)
Serve with a Splash of Club Soda
🥄 Instructions:
Combine all ingredients in a mason jar or sealed container.
Refrigerate immediately.
Shake well daily to infuse flavors.
Strain out the fruit when it reaches your desired strength (3–7 days).
Longer steep = stronger flavor.
Store the syrup in the fridge. Keeps for a couple of weeks.
